As a reminder there is a Devil Fruit Encyclopedia in One Piece. If you remember when Blackbeard spoke to Ace he said he killed thatch because he memorized every fruit from that book and knew just by looking at the fruit Thatch had that it was the Dark Dark Fruit. Also Sanji Read the book too because he said that in Thriller Bark that his dream was to get the invisible fruit Absalom had. So that's how people know what the fruits are. The book is not complete, that's why Kalifa, Kaku and Spandam didn't know what kind of fruits those were. Blackbeard wanted the Dark Dark Fruit so bad that he purposely joined Whitebeard crew because he felt that it was a high chance that they would come across the fruit being in that crew since he is a Yonko that may have connections. So the same can be said for Doffy since he is an underground broker.
