This is so satisfying. The original version of this is with minced mutton called Kheema Pav. This was brought to India from Persia by the Parsi community. The original Irani cafes in Mumbai and Hyderabad were almost all run by Parsis and Kheema Pav was a key dish. Then Gujratis in Mumbai, who are mostly vergetarian, decided to want to have a taste of this dish they made the original Pav Bhajji with vegetables (mainly potatoes, tomatoes and peas) and eventually became a staple street food.
