He started with white people (on the most influence) but he also said Arab, Persian, all kinds of people from east asia and Africa. I think you missed that.
Korbin, Rick, when you come back to San Antonio, will treat you to at least 4-5 really good South Indian food. There's a large telugu and tamil population and a lot of expats starting really authentic restaurants and food trucks. Heck I even get authentic malayalee food in a new restaurant now. Of course, Houston and Dallas have really good Indian food from all parts of India.
Btw, basmati is not the sole choice for Biryani. in the south we use jeera or jeeraka shala rice and plenty of other types of rice.
And Indian food is plenty elegant and super 'rich'. I dont care for Michelin stars but there are really upscale indian restaurants in India and everywhere in the world where its far more elegant in taste, presentation and decor.

Tea with mint is very famous in southern part of India but it would be black tea. Try black tea with less sugar and add mint, ginger on that.. i really love it... the complex version is called sulaimani tea.
