This may have been answered already Matt but I think you have an oil fired combi boiler. That's why you can't run a shower and other hot taps all at once. And it sounds like it's an older model if it doesn't have a thermostat, because all the big manufacturers (worcester Bosch, Vaillant, baxi) have had thermostats as standard for well over a decade now. If you wanted to run multiple showers and hot taps you'd need to switch back to a gravity fed system. I wouldn't recommend it though because you'd need to put an immersion tank back in (I bet there's a large linen cupboard on cupboard that's been converted to a shower in the house - that's where the immersion will have been) and you'd need to put a cold water storage tank back in the loft if that's also been removed. I'd recommend just getting a newer more efficient oil fired combi put in and get to grips with being a one-at-a-time shower family. A combi is also much better for near instant hot water, particularly in the summer. Or you could put in an unvented system, which sort of sits halfway between the two, but it would still be a total pain in the dick compared to just upgrading your combi.
