Generally, the foundational Christendom works that cover these topics were pretty clear humans didn't become angels or demons. I think it has more to do with the fallen world arguement. Angels don't tempt, the devil does. And there's no real market for tempting someone away from heaven, so the real deviltry happens during life. Thus an angel usually only is seen when death is at your side, but the devil shows up all the time.

I wonder why we associate the angel look more than the devil look with death. Must be because dogma says the saved dead will become like angels, whereas it's a mite fuzzier on the doomed.
