I dunno if the baby is really part of the problem/solution, but I'm also gonna guess the sorcerer isn't necessarily the bad guy here.
IIRC Volkim's inner demon things feed on memory and mental activity, and with all the villagers going crazy and ranting off their favorite memories so fervently that they scratch through their own skulls to get at them, I wouldn't be completely surprised if it turned out some of Volkim's escaped buddies had a hand in all this...

I think it would be too obvious that the sorcerer caused the madness or is just trying to benifit from it. The best thing they could do now is attack the dogs, have Eric stay a safe distance from the ruin while the party tries to investigate the sorcerers place without him knowing. Maybe trick the hounds into distracting the sorcerer somehow while they snoop around. That way they could distinguish whether they're up to something or not.

If the baby was devil, Shanes detect good and evil would register fiendish presence from baby, so this alternative is off the table

I think maybe to throw a curveball at them, I think the sorcerer is indeed telling the truth, and maybe the baby is like some sort of tiefling/devil baby and is really the source of it. Who knows though
