Makise Kurisu who seems to love challenging Okarin, John Titor who's apparently from the future, and a couple more girls who's scenes I'm having a lot harder of a time making sense of. The big question to me is who they could ultimately align with.

Tbh, for the best experience, it is generally recommended to watch Episode 25 right after the main show, but in your case, as you have a schedule to keep for Youtube as you said, it might be better for you to watch the non-canon stuff at your own pace. The other recommended alternative I've seen online is to watch Episode 25 and the movie after you finish all the canon material. In any case, the most important thing I wanted to say is concerning Episode 23b: Whatever you decide concerning the filler stuff, when it comes to Episode 23b, instead of seeing it right *after* the main show, it's best you watch it right *before* Steins;Gate 0. I won't explain the reason though because that's a spoiler.

Thanks for the comment about the watch order! I'll probably go with release order like you suggested. Might spread the optional non-cannon stuff as Patreon bonus videos across the schedule while I'll watch Steins Gate 0, so the schedule can also continue at regular pace on YouTube in the meantime. But I'll definitely watch episode 23b right after I finish the main show!
