Re: Beatrice. It's been implied that she has a contract with Roswaal, since she stated in Episode 4 that she oversees Roswaal's forbidden libary. Re: the witch. It was mentioned in Episode 8 by Beatrice that the legend goes that Witch of Envy wasn't able to be killed and was sealed away instead by the Dragon, Hero and the Sage. Whether you choose to believe that or not is up to you of course, but that's how the legend goes. I do like your comparison to Voldemort, since it also fits the whole being afraid to use the name part as well (Satella).

Regarding the blank letter, it will be explained later (season 2), along with another thing you might find curious by now (if it was so previsible that the witch cult would attack, how come the manor was so defenseless and Emilia almost left alone ?).
