Yeah the third family is Tokiomi's, the Tohsaka family. Zouken (the patriarch of the Matou family) is too old to be Kariya's father, maybe if one day you push into F/sn you'll understand why. Rin and Sakura are the children of Tokiomi and Aoi Tohsaka. They are very talented because magic is very strong in the Tohsaka family, whereas the Matou (initially not from Japan) blood has weakened dramatically in the last 100 years. Sakura was "given" to Zouken Matou by Tokiomi, to create a new heir for this family (adoption). Tokiomi is kind of a dick, even if it's unsure if he knew what she would be subjected to, and the disgusting nature of the Matou magic. Kariya wants to protect Sakura just because she's Aoi daughter, he loved Aoi before she chose Tokiomi. He probably still does. And no, Kariya is only a Fate/zero character, all his story is in zero, but in the books they explain his one-sided love for Aoi. Spells from the Tohsakas are in german because the guy who initially taught magic to this family was an almost legendary german magician. And as you kinda guessed (?), Rin and Sakura are two of the main characters of Fate/stay night, two love interests of the main male character. I agree that the world of Fate is ridiculously complicated, a lot of more than any other series you watched here I think.
