Ok! we'll see the result then. Remember that the old series, will spoil a bit of UBW (but in a non-canon way, most of that part is remade like a filler in the middle of that Fate stay night series, it lasts like, 5 or 6 episodes). In case the result of the poll is negative, I humbly advice you to read my little summary, because you'll be quickly spoiled if you search for stuff online. And a lot of infos relevant for UBW may not be mentioned. It's your choice, but I just wish to maximize your experience since I'm such a Fate fanboy (/expert lol).

I'm gonna do a poll to see if people would want Stay/Night before UBW and if not then I'll see if there's a way I can get caught up on some things I'd be supposed to know!

As I said it's a valid choice. The old series kinda "spoils" UBW (even if it focuses on fate), and your audience would probably prefer a recent series. Still it would be best to know a summary of what happens in fate, especially what is related to UBW, I could make it for you, emphasizing only the elements that were specifically laid in Fate to "prepare" for UBW's twists. and only mentioning quickly the rest for context. It probably wouldn't be longer than my previous comment, just say so if you want it.

Yeah I'm thinking if I do decide to watch the others I'd go with UBW and then Heavens Feel, skipping the old Stay Night series. Will I kinda be able to understand what Im supposed to know from Stay Night when I get into UBW? Tbh I have no idea what to expect at this point from all these "routes" and I certainly don't wanna look anything up to avoid spoilers. But would you say it's an ok idea to do UBW after Zero instead of Stay Night?

If you want to watch another Fate series, good luck on choosing where to start ahah. As I said in the past, since the anime adaptations aren't in order, it's hard to know what is the most sensible to watch first. Probably either the old series (adapting mainly the first route* of F/sn, "fate", and mixing it weirdly/inconsistently with bits of the second route, UBW), or Ufotable's* series on UBW, the second route of F/sn. On one hand, the old F/sn serie is little appreciated, and visually not as impressive as Ufotable's adaptations (made years later), and also would show too much of UBW (and rather badly). But on the other hand, starting with Ufotable's series UBW means you won't know anything about the first route of F/sn, fate, the introduction to the entire franchise. And with the UBW series you have some fillers -_-, mainly references to F/z anime (which was released sooner). Either way, you kinda lose (and win) something. It's a mess so there's no perfect choice. The last step (if you do it) would probably be the three movies on the 3rd route of F/sn, named Heaven's feel. Very good for "just" movies (obviously you miss most of the dialogues so you can't totally understand everything, but the visuals and the atmosphere is stunning), with the most impressive battles I've EVER seen in any anime from a technical/visual point of view. Sadly, the most faithful adaptation to the original remains probably F/z, probably because it was from books, not from an interactive visual novel. *As a reminder, a route is a parallel scenario (because of choices) in a visual novel, F/sn have 3 main routes, in which everything happens differently. In F/sn, they are normally to be read in order for scenaristic reason: fate, then UBW, then HF. But it's generally never the case for people watching the animes. *Ufotable is the studio that made F/z, F/sn UBW, and the movies about Heaven's feel. The first old series was made by another studio.
