Fate/zero is a book (and is a separate story, not a route), only Fate/stay night and Fate/hollow ataraxia are visual novels. Hollow ataraxia is impossible to adapt in an anime/manga, so it will remain a game forever imho. But the 3 routes of Fate/stay night are fascinating trust me. Those 3 stories are complementary: in one route, some unlucky characters are killed very quickly, in the next route they get a chance to shine and suddenly reveal unexpected story elements that explain a lot of previous stuff. The story of Fate/stay night is very intricate and subtle, that's why you had to do the 3 routes in order (the 3rd reveal the truth about the Grail). Sadly, as animes, I think the anime based on Zero is better. But in the original media, Fate/Stay Night is one of my favorite story ever, better than Zero. Adaptations warp how you see the story :/.
