There's no correct way to watch Fate animes, when there's no proper Fate-route adaptation (it's universally agreed that the 2006 adaptation is crap). And still, if it wasn't for that adaptation, I would have never read the VNs, because at that time, there wasn't anything else and I craved for more of this universe. And so, Zero is wrong starting point because it spoils a lot of plot points of Fate. To list few: Rin and Sakura being sisters, the nature of the Holy Grail, Kirei's personality, history of Sakura and Zouken. Most of the spoilers affect more the Heaven's Feel route. Also, when the Fate/Stay Night visual novels were released, Fate/Zero didn't exist yet in any format. We knew very little about what happened in the past, just some key points. A lot of the details were refined into these newer anime adaptations afterwards. Ufotable's anime adaptations have been written in a way to minimize the effect of the spoilers, and mostly designed with the thought, that you've seen their previous anime. I think that's why they were able to successfully cram the most lore heavy route into a three part movie (Heaven's Feel), when they didn't need to explain every detail. And if I remember correctly, in VN, the Heaven's Feel route had more text than the other routes combined, even if you take into account all the dialogue that was common with all routes (basically the beginning, as you play that same part multiple times with just small alterations). And that's why Fate UBW is wrong starting point, because it assumes that you've watched Fate/Zero. And to really enjoy Heaven's Feel (other than cool battles), you'd need to at least watch Fate/Zero to understand the things behind Holy Grail War.
